But, what if we tell you that you can still enjoy this delicious dessert, and not gain any extra pound. You can eat this dessert without the feeling of guilt as it does not contain flour, butter, or sugar.
So, if you are a chocolate lover, but you want to eat healthy, then this recipe would be ideal for you. It is based on cocoa and pumpkin, but it includes other healthy ingredients like avocado, almond flour, coconut or almond milk and chia seed. The content of these ingredients contribute to the soft and tender texture to the brownie cake.
The Health Benefits of the Used Ingredients
Pumpkin or squash pumpkin
This tasty food product is packed with antioxidants such as beta-carotene, carotenoids, lutein and zaxanthine, which can battle against cellular aging, protect the eye retina against oxidative stress and enhance the immune system.
It is high in unsaturated fat which is very beneficial for the heart. It has in its content carotenoids which boost the eyesight, plus it contains phytosterols that can reduce the cholesterol.
This product is a natural antioxidant, high in flavonoids that lower the risk of heart disease and certain cancers. Recipe for Pumpkin Brownies
Quantity: 14 brownies
Baking time: 30 – 35 minutes
1 cup of organic pumpkin puree
1 cup of organic avocado puree
2 cups of organic cocoa powder
6 tablespoons of organic almond flour
¼ cup of organic chia seeds
½ cup of unsweetened coconut milk, organic
2/3 cup agave syrup/ liquid coconut sugar
1 tablespoon of baking soda
½ cup of chocolate chips (optional use)
1 tablespoon of honey or maple syrup
First you need to prepare the pumpkin puree and for that purpose you should boil 2 to 3 cups of chopped pumpkin in water over medium heat for 20 minutes. Drain the excess water and leave it to cool off.
For the chia gel, you should combine 2 tablespoons of chia seeds in a glass of coconut milk or water. Leave them for 10 – 15 minutes. After this period of time they will turn into gel which can easily replace the use of eggs which is really important if you are a vegan.
After you have finished with the preparation of the pumpkin puree and the chia seeds gel, preheat the oven at 180 °. Take a cake pan and place baking paper on it.
Take your blender and place all the ingredients except for the coconut milk and chocolate chips. Blend this mixture till you obtain smooth texture. Next, add half a cup of coconut milk and mix the dough once again. If it is too thick, add a little bit of the coconut milk.
Place the dough into the pan, and then put the chocolate chips, but leave some for decoration.
Your cake is baked when a toothpick comes out clean from the center of the cake. Remove it from the oven and let it cool off so that you can nicely cut it.
Keep it in the fridge for a week or you can freeze it.
