Healthy Anti-Inflammatory Coconut & Sweet Potato Muffins with Ginger, Turmeric, Cinnamon and Maple Syrup

The intake of sugar is very harmful for the body and the overall health, but what if you can still enjoy your favorite dessert without having the feeling of guilt.

All you need to do is to replace all the inflammatory ingredients such as refined sugars, processed wheat, and vegetable oils with anti-inflammatory ingredients. These ingredients are high in nutrients and it will offer you a healthy and delicious meal. This meal will energize the body and promote its general health.

This recipe is based on the use of sweet potatoes which have high nutritional value being a great source of vitamins, minerals, and antioxidants. As per the San Diego-based nutritionist Laura Flores “due to the color-pigmented vitamins, sweet potatoes are high in anti-inflammatory benefits.”


“Sweet potatoes are high in vitamin A, vitamin B5, B6, thiamin, niacin, riboflavin, and, due to their orange color, are high in carotenoids. Plus, they’re fat-free, relatively low in sodium and have fewer calories than white potatoes — although they do have more sugar. “

Sweet potatoes are extremely beneficial as they do not cause blood sugar spikes, but still offer the needed energy, even in the case of type 2 diabetes.

This is what Flores states regarding this issue:

“Sweet potatoes — unlike other starchy foods that elevate blood sugar rapidly after [they’re consumed] due to their metabolism into sugar — will help steady the levels of blood sugar. 

Other included ingredients in this recipe are coconut flour and coconut milk.

This flour is a great healthy alternative to the standard used flour as it regulates cholesterol levels. On the other hand, coconut milk is rich in healthy medium-chain fatty acids that enhance the work of the metabolism and promote weight loss. This milk is packed with minerals such as vitamins C, E, and B-complex, and vitamins like calcium, magnesium, iron, selenium, and phosphorus.

The included spices like turmeric and ginger fight off inflammation and bacteria, reduce cancer risk, and prevent viruses.

A Recipe of Plant-based Muffins:

Needed Ingredients:

  • 1 small organic sweet potato, roasted
  • ¾ cup of organic coconut milk
  • 2 tablespoons of organic olive oil
  • 3 tablespoons of ground flaxseed combined in half a cup of water
  • 1 cup of organic brown rice flour
  • A quarter cup of organic coconut flour
  • Half a cup of pure maple syrup or unpasteurized honey
  • 1 tablespoon of baking powder free of aluminum
  • Half a teaspoon of Himalayan salt
  • ⅛ teaspoon of ground nutmeg
  • ⅛ teaspoon of ground cloves
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground turmeric
  • 1 tablespoon of ground cinnamon


First you need to bake the sweet potatoes, and for that purpose preheat the oven at 400F. Make several holes in the skin of the sweet potato by using a skewer, and then put it on a baking tray. Bake for 1 hour.

Once cooled, cut the sweet potato in half, and then scoop out the insides of the potato. Use the inside to mix them with the maple syrup, flaxseed, coconut milk, and olive oil.  In a separate bowl, mix the other ingredients and then include them into the other mixture.

Next, nicely grease a muffin tray with coconut oil, and then pour the batter evenly, and bake for around 30 minutes.
