A Recipe of Plant-based Muffins:
1 small organic sweet potato, roasted
¾ cup of organic coconut milk
2 tablespoons of organic olive oil
3 tablespoons of ground flaxseed combined in half a cup of water
1 cup of organic brown rice flour
A quarter cup of organic coconut flour
Half a cup of pure maple syrup or unpasteurized honey
1 tablespoon of baking powder free of aluminum
Half a teaspoon of Himalayan salt
⅛ teaspoon of ground nutmeg
⅛ teaspoon of ground cloves
1 teaspoon of ground ginger
1 teaspoon of ground turmeric
1 tablespoon of ground cinnamon
First you need to bake the sweet potatoes, and for that purpose preheat the oven at 400F. Make several holes in the skin of the sweet potato by using a skewer, and then put it on a baking tray. Bake for 1 hour.
Once cooled, cut the sweet potato in half, and then scoop out the insides of the potato. Use the inside to mix them with the maple syrup, flaxseed, coconut milk, and olive oil. In a separate bowl, mix the other ingredients and then include them into the other mixture.
