Recipe of Healthy Coffee Cheesecakes

Needed Ingredients:

First you should prepare the crust.

Crust:

  • 3/4 cup of shredded coconut, unsweetened
  • 4 tablespoons of butter, at room temperature
  • Half a cup of raw sunflower seeds, unsalted
  • A quarter cup of cocoa powder, unsweetened
  • A quarter teaspoon of salt
  • A quarter cup of Swerve Sweetener

Here are the ingredients for the filling:

Filling

  • 16 ounces of cream cheese, at room temperature
  • 3/4 cup strong brewed coffee, hot
  • 5 teaspoons of gelatin
  • 1 cup of heavy whipping cream
  • 2 teaspoons of coffee extract
  • 2 teaspoons of vanilla liquid stevia
  • A quarter teaspoon of salt

Finally the topping:

Topping

  • 2 ounces of dark chocolate, 85 %
  • 1 tablespoon of coconut oil

Method of Preparation:

First you should make the crust, therefore blend the coconut and sunflower seeds till they are nicely ground. After that include the remaining of the crust ingredients, and blend till you obtain smooth texture. Place the mixture in an 8-inch spring form pan, and press it onto the bottom.

Next, take a bowl, and add in it the hot brewed coffee, and the gelatin. Stir both ingredients and set it aside.
